Tanking Party ??

Being a person who is not so good at party building and does not particularly like the twitching dance around enemies what would be a descent
stand and fight tanking party with only the odd now and then twitching about ?

Just stand and fight tanking is a bad strategy. Even with 300 Health, 100 Protection and 20 Evasion you will be torn to pieces. You might get away with standing/tanking the weaker monsters and potion use but once you get in the tougher areas or go against bosses this strategy means Game Over.

What about switching difficulty level to "easy" at the beginning? As I read, the puzzles are unchanged but the monsters are less aggressive and easier to hit. So maybe a tank party has more chances to survive?

Yes, just holding your ground and fighting wont work very well in this genre but the easy mode might help a little bit, altough I doubt you could be able to beat the game like this.
(I remember the EOB games I played as a chiled and failed miserably in fights because I didnt recognize to move around while fighting, hehe. Nostalgic feelings ^^)
If I remembered correctly, some people are going to make some kind of film about Grimrock, I hope they implement this fighting mechanic too, it will be hilarious to watch as 4 people (2 of them in heavy armor and one of them a 90 year old mage) are running circles as fast as they can around one enemy while sticking together as a group and hitting it occassionally with their weapons :-p
Albert Pope could be the coach for their actors if they need to (minute 0.40)

Good old Dungeon Master when I played that in the day I tanked it from start to finish, but then you could kill things under doors
