dude you have no idea i literally watched like 20 hours just to see what would happen when she found a mimic, since she screamed so much the first hour
like 25% of chests are mimics so it was remarkably bad luck on my part

the first mimic for me was in the bog dungeon (the chest near the pickaxe). That dungeon is eerie enough as it is.
my heart skipped a beat. Had to quit the game, take a long warm bath and cuddle my wife before I could continue.

Isn't the first mimic you can encounter the one in Desarune that is super hard to get to? At least that was the first I found. I really never expected that one to be a mimic, because in like all other games Mimics are usually the treasure chests easiest to get to (since they want to be opened to lure their prey).
There are already active mimics deeper down into that dungeon. Would suck if you meet those before one that is disguised as treasure chest.
And why are there locked mimics. It doesn't make sense. It's like sealing your mouth. Maybe it was the Island Master.

Mimics are randomized. At the beginning of the game 8 chests are randomly chosen to be mimics. Chests in Shipwreck Beach, Dead Sailor's Cave, Twigroot Forest, Twigroot Tunnels, Twigroot Basement, and Forgotten River are ineligible to be turned into mimics, the rest are all equally probable.

That's animal cruelty. No wonder they're angry/hungry, though!

Hah. They got me good too. It's nicely unexpected 'cause you've already opened a dozen chests or so.
If you spot more first reactions to mimics, do post.
