In Grimrock 1, you'd get an empty flask back when you consumed a potion, but I don't get any in Grimrock 2, so where can I find flasks?

There aren't any flasks in LoG 2. When you create a potion, all you need are the required ingredients. Potions are now stackable too.

It was a surprise to me when I saw I got no empty flask.
But its made my alchemist amazing, as he can make potions and bombs mid battle.
Then I can swap it with a character's weapon, use it, and put the weapon back, without having to open up the inventory all the time.

I still make a few potions out of battle, but I think they are heavier.

Yup, as mentioned, there are no empty flasks this time around.

When you drink a potion, it disappears. And when you brew a potion, all you need are mortar and pestle + herb(s), and a potion (within a flask) will appear in your inventory.

I really liked pots for the reality factor (use what you can find), but seems it was a hindrance in such a larger, deeper game

Yes, was better with them, except the fact they couldn't be stacked.
