Get a pencil, an eraser, a piece of graph paper (squared) and just draw
There are different technics though, I personnaly draw the walls (like Mychaelh just below) when some people fill in the tiles (like
Nianu - beware, spoiler alert).
The best way to learn is to draw. you'll have to redraw your maps a lot anyway
When I draw a level, I start to draw on a rough paper, starting from the center. When I become close of the paper border (because map drawing ALWAYS lead to this situation), I draw elsewhere, putting anotations and links so I can continue drawing without starting all over again everytime it happens. And when I think I'm done with the level, I re-draw the map in a shiny cleany way.
You can also use a graphic software if you have another PC next to you.
Here's another example of a map (from Eye of the Beholder Solutions):

Here is an example, how I made it 'back in the days':
I now play without map-drawing at all, to make the labyrinth experience more 'immersive' and to stretch play-time.

Definitely an acquried skill. First off, make sure you find the compass. It's in:
It's in level 2 somewhere, near the beginning. Explore!
Then, when you use it, there's little to no chance of losing your surroundings. You'll get used to it and it will become second nature.
If you reach te edge of the map, simply continue the corridor in the opposite side of the map. It's in level 2 somewhere, near the beginning. Explore!
When you reach the next level, compensate for it and draw the starting location someplace else. (The exit\entrance are around the same "tile" for the subsequent level).
Hope this helps
