I am sure some have, but others... I tend to think of DM as primarily a tactics/strategy game. Insofar as a puzzle relies on really tight timing, I tend to view that as a weakness in the puzzle, because it should be about thinking, not about speed. Mostly. Sadly spiders are a fantasy RPG staple monster - they are in almost every game of the genre. However they are very, very well done and creepy in LOG tho so I can imagine if you're arachnophobic its terrifying. I'm personally delighted that the other staple of RPGS - rats, havent turned up (yet) . The first quest is always 'kill rats in my basement' or something similar. I really expected the first mobs on level 1 to be rats lol. I have nothing against rats (actually I love rodents and keep mice as pets IRL) its really nice that they resisted the cliche hehe.

Nothing wrong with people asking for an OPTION to slow things down a bit so they can cope. They don't want the game slowed down for everyone, they want the OPTION to slow it down for themselves so they can enjoy it properly. And last I checked, having more options available for a wide variety of players was a GOOD THING.

You're suggesting that a barrier to entry is in place. I am not.
I am saying though that if that store sold nothing but soccer boots, rugby boots, football boots, bicycles, pogosticks and leg presses that anyone is welcome to come in and shop but you cant complain if the merchandise is not suited for you if you're confined to a wheelchair.
"slowing things down" as you put it is imo contrary to the style of the game and the execution of it. Next you'll have people wanting FPS's ot have 100% auto aim so the less skilled can complete it, or an insta kill option for a fighting game for people who cant cope with difficulty. What you're suggesting is actively opposite of the intention of the game. Catering to people who are not the target audience is why gaming is becoming more and more homogeneous and why people have lower and lower expectations about what is expected from a game. It also means that people like myself who have not dropped their expectation get labelled as elitists or hipsters, or some other equally dismissive title. Catering to the lowest common denominator is why we get watered down games, or rinse and repeat sequels or the worst crime of all "reboots" that bare nothing or little in common with their preprocessors (syndicate and the FPS XCOM being two examples).
There is ALWAYS a target audience. Claiming otherwise is nothing short of lying. You always have a type of gamer in mind. If you didnt then you would have a directionless mess that doesnt appeal to anyone. The appeal may end up being broader but saying that something was designed for everyone just doesnt strike as being even remotely true. Saying that something was designed around certain gameplay principles rather than a specific gamer would a better way of phrasing it, but still you've targeted a certain demographic by that design choice. There is no such thing as any product that does have a target audience.

There is already a monster toughness setting which makes combat easier/harder. That aspect of the game is already user-customisable to suit the individual gamer. The game even SAYS its for people who want to concentrate on puzzles rather than combat, thus appealling to more than one playing style by default. What is the difference if they added a setting that make timed puzzles give you slightly more/less time? If you don't need it leave it on normal, or even crank it to hard if really want a challenge. Just like the monster toughness slider.

Which is why I get so frustrated when people like the OP, pull the whole "Go play another game" BS.
I've finished the game, and there is nothing I want changed. However, I readily realize that some people are physically or mentally incapable of succeeding in this game.
There should be options for those people. I find it incredibly selfish that the OP and others are making post attacking people who are just asking for alternatives.
Alternatives that would be completely optional and would not ruin the experience for anyone else.
