The author of that mod did not make this thread, I was quoting coreystinson, who made this thread. He thought there weren't enough herbs, clearly because he was taking way too much damage.

Also please try to remember that conditions vary from player to player as parties can be made many different ways.

Second, the author of a mod clearly has a vastly easier time completing their own dungeon because they built it themselves, therefor they will not run into problems such as starvation from an extreme lack of food because they know how to speed through.
Now normally a dungeon that induces starvation would be fine if it specifically wasn't made for mages, but in the walkthrough videos you can clearly see he is using one.

Info from the playtest:
The initial playthrough test was held by two persons, who have never played a dungeon crawler before.
They had a mage in their party and finished the game without help with four full wooden boxes of food.
I understand that different person play the game in different ways, but somehow a mod creator has to figure out how much of anything to place in a campaign, and it's not an easy task.
