for tri spec rogue with daggers.. 33 daggers is pretty good.. I went at least 17 dodge 8 assassin build.. if you are not worried about using light armor.. or even plan on going back row 12+ assassin for the Reach - 20 asn for triple backstab damage is nice..

12 points into Assassination enabled Reach Attack so you can do a melee attack from the backrow.

you can also quickly shift their positions while the front row guy is "cooling off", then shift back for his turn

You'd be wasting his spell casting capabilites.

Wouldn't Lizardman Rogue with maxed Dex and Dodge and with two shields do the trick better then?

EDIT:
I've done some boring math below and it turned out that Insectoid Fighter would make a perfect double-shield tank as well.
Here some basic stats (first number is for Lurker Set, the other for best available Armour Set).

Minotaur Mage: Base Health 90, Protection 17/53, Evasion 107/87
Lizardman Rogue: Base Health 120, Protection 2/38, Evasion 171/131
Insectoid Figther: Base Health 165, Protection 50/110*, Evasion 92/72*

*I'm not sure if Insectoid Figther without any points allocated in Strenght would work with full Valor set, so porbably ignore second numbers. Probably you could mix lighter parts of Valor set (like gauntles and helm) with Lurker set (P 65/E 87).

EDIT 2:
I know that Minotaur with gargantuan Vitality will gain more Health points per level but still I'm not sure if he will be able to beat the difference of 75 points.

Boring math (may include some mistakes):
SpoilerShow
Mage Minotaur (as you proposed):

Health (base+skill) 60 + 30 = 90

(with Lurker set and Leather Gloves):
Protection (base+equipment+skill): 0 + 2 + 15 = 17, Evasion (base+equipment+skill): 9 + 48 + 50 = 107

(with Chitin set and Leather Gloves):
Protection (base+equipment+skill): 0 + 38 + 15 = 53, Evasion (base+equipment+skill): 9 + 28 + 50 = 87

Lizardman Rogue (Agile + Evasive, Dex>Vit, maxed Dodge)

Health (base+skill) 60 + 60 = 120

(with Lurker set and Leather Gloves):
Protection (base+equipment+skill): 0 + 2 + 0 = 2, Evasion (base+equipment+skill): 25 + 76 + 70 = 171

(with Chitin set and Leather Gloves):
Protection (base+equipment+skill): 0 + 38 + 0 = 38, Evasion (base+equipment+skill): 25 + 36 + 70 = 131

Insectoid Fighter (Natural Armour + Evasive, Dex>Vit, maxed Armour)

Health (base+skill) 65 + 100 = 165

(with Lurker set and Gauntlets of Valor):
Protection (base+equipment+skill): 5 + 15 + 30 = 50, Evasion (base+equipment+skill): 19 + 68 + 5 = 92

(with Valor set):
Protection (base+equipment+skill): 5 + 75 + 30 = 110, Evasion (base+equipment+skill): 19 + 48 + 5 = 72
