Ultima - Owned by EA
Bards Tale - Owned by Interplay
EotB - Owned by WotC (See: Hasbro)

I honestly don't see any of these big companies releasing their rights to a small indie dev. Or see Almost Human having the money to license out the rights. :P
Fuck 'em, anyways we'll make our OWN versions!

Ultimate Quest - Fuck EA...
Bard Song - InterPlay God, how I miss these guys...But we still have Obsidian and Bethesda!...Bioware is dead, or dying as they're a division of EA.
The Beholder's Eyes - Hasbro?...Really?...
Don't see why we should even bother doing that. Let's work on custom, original works. No need to copy others.

Also, the name "Beholder" is owned by WotC (yes, Hasbro owns WotC), so tha'd be a no go. :P

I wouldn't mind playing Eye of the Beholder and Bard's Tale in LoG Engine (especially BT, because I haven't played it on my ZX Spectrum).
But UW is completely different thing.
Call me a heretic  but it's remake should be done in some appropriate engine, like TES: Oblivion or TES: Skyrim.
Maybe these games suck, but rebuilding UW and UW2 would be mind blowing.
Even though I do not care much about grafics (I recently played Undercroft on PC and I wholeheartedly recommend it), original UW engine is too clumsy for me now.
Does anyone even though about remaking UW as a mod in some modern engine?

Ahhh, it depends on the context as in : Beauty is in the eye of the beholder!

But back to your point, yeah, it should go without saying that we would be making our own title/stories, but on the other hand, imagine a re-boot of these great games re-made using the same, yet updated engine, as this is the only one in existence that has grid-movement much like the dungeon crawlers of old...In fact, it could not necessarily be a complete remake, just an homage dotted here, and there within our own custom games much like Arx Fatalis as the spiritual successor to UUW! ;)

Ever see U6 re-done using the Dungeon Siege engine?
Assumptions are the practical logic of the ignorant.

I know we all have great nostalgia about these old games, but nostalgia is idealization of the past. It almost never lives up to what we remember. Lets leave these old games alone, and just remember how great they were, while we move forward taking what we've learned from them, and create something new, as Almost Human has done with LoG. They've created an entire world. I'm sure they have plans to expand upon it.
EotB game is not owned by Hasbro its bit more of a complex one since Strategic Simulations Inc no longer exist alot of the D&D games i think nearly all are owned by Atari hat including all the Forgotten Realm universe . But then again Strategic Simulations, Inc. got fused with Minescape, then later who got brought out by Ubisoft in 2001. So long story short rights are either with Atari or Ubisoft.
