I got him in my first attempt. I'm not sure he even managed to hit me. I sidestepped when he would try to face me. I think the only thing that did was make me feel even more inferior... thanks for the input! ;) I finally managed to beat him by spamming the Rage and Protection potions and revives......

The boss is invincible until you kill most of the undead in the first wave. After you've killed all but one undead (IIRC, it might be all but two) the shield will go down and you can just backstab it to death. Even with poor damage output it should be easy to kill it before the second wave of monst...
