Coincidentally, I re-installed Wizardry 8 last week but haven't got around to starting it yet.
I also have on my games shelf "The Ultimate Wizardry Archives" which comprises Wizardry 1 - 7 & Wizardry Gold.

You can select easy/normal/hard combat option at start of a game - you cannot change difficulty during game - you would have to restart with a new party. There is also an "old school" mode (no in-game map)
